After Tate was born, my friend Steph invited us over for dinner one evening. She made chicken tacos in the crockpot and they were fabulous. They are now a staple in our house, we modify it slightly and add black beans.
You will need:
- 1-2 whole boneless skinless chicken breast {cut in half and trimmed of any fat}
- 1 can red or green enchilada sauce {we prefer the red}
- 1 packet taco seasoning
- 1 can water
Pop all of it into the crockpot and cook on high for an hour and a half to two hours or low for 4 hours.
Remove the chicken breasts from the liquid and shred. I used this AWESOME technique that I found on Pinterest with great results, you put the chicken in the Kitchen Aid with the paddle attachment and turn it on... the chicken gets perfectly shredded by magic. It was like David Copperfield himself was in my kitchen. Magic, I tell you! I’ll never go back to shredding it with a fork again.
Add the shredded chicken back to the liquid and add one can of black beans if you like. Bring everything back up to temp & serve!
Serve with all of the taco fixings your family enjoys!

Sounds yummy! And I found that trick for shredding chicken on Pinterest too. Seriously, it was one of those, "Why didn't I think of that?!?!" moments. Brilliant.

Ooooh, these sound yummy!!! Tacos are a staple in my house. If it was up to the kids, we'd have tacos every day. I think I will make these my next day off!
I wish I had a Kitchen Aid mixer. I want one in the worst kind of way - I was really hoping I won the pink one a long while back!!! Oh well, someday.... For know, it's the fork method for this chick.
I am going to have to try this version. I have tried it where you add the taco seasoning, a 16 oz jar of salsa of your liking and cook in the crock pot. I think the extra water will definitely help with the drying out factor. When it comes to shredding the chicken my technique is handing the hubby 2 forks while I chop up veggies! ;)
Ooooh-kay, I will never shred chicken the same way again. In fact, we're making a shredded pork recipe this week - I may try it with that, too! Oh, and the tacos sound delish :)
OMG I think I might cook some chicken tonight just so I can try shredding it in the mixer.
