Slow Cooker English Roast

09 January 2012

I love using my crockpot in the winter and for days that we’re in a rush.  Having dinner all prepped and done by 10 am makes for a peaceful evening and my house smells so good all day!

  • 2-3 pound English Roast {aka chuck shoulder}
  • 1 large white onion
  • 1 carrot
  • 4 cloves garlic
  • 1.5 - 2 Tablespoons of Spices {I used salt, pepper, Italian seasoning, & a French spice mix}
  • 1 1/3 cups of red wine {my fave is Trader Joe’s Cabernet Sauvignon, at $3 a bottle you can’t beat the flavor for cooking!}
  • 1/2 cup olive oil
  • 1/3 cup balsamic or cider vinegar

Chop the white onion, one of the carrots, and four cloves of garlic and layer on the bottom of the slow cooker.

Put the English roast on top and sprinkle with salt, pepper, and spices.

Pour the wine, vinegar, & olive oil into the slow cooker, cover and turn on low.

Cook for 7-8 hours and enjoy!  I like to serve with potatoes and a vegetable or two.

This sounds SO tasty! I love slow cooker meals and have yet to try any beef in our new one [minus pot roast, you know the old standby] I will have to try this thank you for sharing!

This looks awesome, especially with the wine and vinegar. Perfect timing, as I need something quick and easy this week. I'm picking up a roast today!

We just got a new one. My husband wanted to make a chicken in it. Have you cook chicken in yours? Have any secrets to share on crock pot cooking? This is new me! But I think I will like it!

Simple and delicious. I cooked some fingerling potatoes and added them to the slow cooker for the last 30 minutes and everything was fantastic!!

I just put this in the slow cooker this morning. We had a mix of veggies with young red potatoes, so in it all went. So far, it smells delicious!!

what size slow cooker do you use?

Hi Anon, my slow cooker is just the standard size, 6 quarts. I have this one from CrockPot, it's not programmable, but it's less than $30 and has been great for about 8 years:

Do you put a frozen roast in. Or a thawed one?

Michelle said...

Hi Anon, I used thawed, but I spouse you could marinate and freeze, then just as to the cooking time!

I skip the oil and add wine and beef broth at the beginning. I also add fresh thyme and mushrooms!

I don't have any red wine, add more beef broth?

I make chicken in mine all the time. I will make whole chicken, chicken parts, chicken stock, and white chicken chili. Crockpot is so versatile, you can really make so many things in it!

I do bbq chicken in my crock pot. I put like ten legs in my crock pot then bbq sauce all over, I try to put enough in that it doesn't stick to the bottom, like 1 1/2 - 2 bottles of bbq sauce then I let those cook a while then throw in some half cut or quarter cut potatoes and it's so good. The chicken falls off the bone and the potatoes are just like baked potatoes!
