When Lyndsey and I were little, our Meme used to make baked apples as a treat. Here is a grown up version, easy to make in the crockpot that turns out like an apple crumble. If you don’t like the skin, you can also peel and slice the apples into chunks and just layer the topping over the apples.
Crockpot Baked Apples
You will need:
- 4 granny smith {or other good baking variety} apples, cored
- 1/4 c apple juice or water
- 1/2 c brown sugar
- 4 TB butter, diced
- 1/2 c oats
- 1/2 c almonds or pecans {your preference}
- 1 Tb cinnamon
- dash nutmeg
- dash ginger
Core the apples using a paring knife. {I cut a cone shape out of the top, then did the same to the bottom, then scraped out the middle.}
In a food processor, pulse the brown sugar, butter, almonds or pecans, cinnamon, nutmeg, & ginger until butter is incorporated and nuts are finely chopped. Add the oats and pulse twice just to mix in.
Pack the filling into the apples, add the apple juice or water to the bottom of the crockpot, cover and cook on high for 2 hours or until apples are soft.
It cooks down into a soft chunky appley mess that I neglected to take a photo of because we were too busy enjoying it. Serve with a scoop of vanilla or dulce de leche ice cream & enjoy!

Perfect! I have a white bean chili in the crockpot right now and was just thinking how I need to use it more. Plus, I LOVE baked apples.
I don't really love warm fruit, but this sounds delightful!
i might actually use my crockpot for the first ever just to eat these.
