Ice Cream Sandwich Cake Three Ways

I asked for some easy dessert recipes on Facebook and got a ton of suggestions, one sounded like the perfect summer dessert… ice cream cake made with ice cream sandwiches!  I made three different versions, an Oreo, a Coffee Heath Bar, and a Peanut Butter Cup.  They are so simple, can be made ahead, and taste amazing.

Here is the basic recipe:

  • 1 cup heavy cream
  • 1 TB sugar
  • 1.5 t vanilla bean paste {or vanilla extract}
  • Ice Cream Sandwiches {I used 7 for each}

For the Oreo Add:  5 crushed Oreo cookies, 5 Oreo cookies cut in half for the top

For the Coffee Heath Bar Add:  2 TB instant ‘fancy’ coffee, 2 crushed Heath Bars, 1 crushed Heath Bar for the top

For the Peanut Butter Cup Add:  1 TB peanut butter, 4 Reese’s Peanut Butter Cups chopped, 4 Peanut Butter Cups cut in half for the top

 

Here is the tutorial for the Peanut Butter Cup Ice Cream Sandwich Cake from start to finish.  I will note the places where you will substitute in other items for the Oreo or Coffee Heath Bar versions.

First, you will fit a bread loaf pan with wax paper, allowing it to hang over the edge of the pan.  This will allow you to lift the entire cake out of the pan.  Fit the bottom of the pan with four ice cream sandwiches, cutting to fit your pan.  You will have some small pieces left over, pop those back in the freezer you will need them for the next layer.

Add the cream, sugar, peanut butter and vanilla bean paste to the mixer and mix on medium.  You will omit the peanut butter for the other versions and add the instant coffee for the Coffee Heath version.

Once you reach whipped cream consistency you will add in the chopped peanut butter cups.  For the other versions, you will add in the two chopped Heath Bars OR the crushed Oreo cookies.  Then, you will spread half of the whipped cream on top of the layer of ice cream sandwiches.

Then top with a second layer of ice cream sandwiches going the opposite direction.  {This is where you will use the smaller pieces to fill in if needed.}  Then top with the other half of the whipped cream.

Top with the Reese’s Peanut Butter Cup halves.  For the other versions, you will top with the Oreo halves or the crushed Heath Bar.  You can then fold over the wax paper and pop it into the freezer.  Freeze for at least 2 hours before serving.

Just in case you want to see. I didn't leave mine in the freezer long enough and it started falling apart when I first cut into it but it still was hecka good;)
